Key Lime Cake
a.k.a. "Shrek Cake"
This is one of the best cakes EVER! It could be made using any flavor of jello, I suppose. My sweet kids, as toddlers, called this "Shrek Cake" because of the color. It tastes AMAZING, it's very MOIST!!!
1 box lemon cake mix
1 6 oz. box lime jello (powder)
3/4 cup orange juice
5 eggs
1 1/3 cup oil
Icing:
1/2 cup butter
1 8 oz cream cheese
1 lb powdered sugar
chopped pecans
Preheat oven to 350 degrees. Combine cake mix and jello (powder). Add orange juice and mix. Add one egg at a time, mixing between each. Add oil and mix well. Bake 20-30 minutes.
Ice cake when completely cool.
